Serves 2


1 zucchini, finely sliced
¼ eggplant, finely sliced
¼ red onion, finely sliced
¼ red capsicum, finely sliced
¼ yellow capsicum, finely sliced
3 tbsp dried cranberries, finely diced
2 cups couscous
Mint to garnish
Spray oil



Heat a griddle plate to medium heat and spray with a little oil.


Place all the vegetables in a large bowl and season. Place the vegetables onto the griddle plate and cook each side for about five minutes, or until cooked.


Cook the couscous as per the packet instructions. Once the couscous is cooked, place it into a bowl.


Add the chopped cranberries and char-grilled vegetables and mix together. Garnish with the mint and serve warm or cold.
